I was talking to a friend on Skype today and he mentioned he’d recently bought Coconut Butter and that it was seriously delicious. I always thought coconut butter was something you slathered on your body in the tropics! (Well, not me personally as I burn just thinking about the word tropics! Plus, bugs eat me alive! Sigh…)
Anyway, apparently this is a yummy food and acceptable on a paleo diet, too, just like coconut oil!
I wondered if you could make Coconut Butter at home, so I went digging for a recipe or a method, I guess, and found that it’s insanely easy to make.
Coconut Butter Recipe
Add organic (no sulphites), shredded, dessicated coconut to your food processor and let it run for a good 8-10 minutes (or more, if necessary). At the end, you should have a pourable butter, almost identical to cake batter. Pour it into a jar. It will firm up at room temperature; no need to refrigerate. That’s it!
It’s not as smooth as the store-bought kind, according to what I read online… and mine certainly is very, very slightly grainy, rather than perfectly smooth, but, really, who cares? I might try making it in my VitaMix next time, but likely will have to add a bit of coconut oil. It’s very tasty and would probably be great in sauces, ice cream (oh yeah, coconut ice cream!), etc. If you’re still eating bread of some kind, I think it would make a wonderful spread. Oooh, and spooned over berries! (Maybe warm it slightly first.)
Update: If you pour it into a shallow container and stick it in the fridge, then score it after it starts to harden, you can make it into coconut fudge squares. I must say I do like it straight from the fridge, even though you don’t need to store it that way. Can’t spread it, but you can break off chunks… and just eat them! Yum! I bet kids would love this stuff.
Update #2: I actually bought some commercially-produced Coconut Butter and it was very slightly grainy, too, kind of like eating a mouthful of shredded, desiccated coconut. You know that dry sensation. Anyway, it means there’s no benefit at all to buying this stuff, since it’s so easy to make!
While I was researching coconut butter I found a Canadian company selling all things coconut (yes, they ship to the USA!). It’s a store primarily for raw food vegans, but don’t let that deter you. They sell crock pots, yogurt makers and dehydrators, too, so you can make your own beef jerky! And they sell a long list of coconut products, some I’d never heard of: coconut crystals, coconut sugar, coconut vinegar, coconut chunks, coconut nectar, coconut aminos, coconut oil, coconut flour and Coconut Butter, of course. How about Chocolate Coconut Butter? Yum!
